SpamAssassin checks the header and the body of every email message, gives it a spam score and then continues in accordance with the level that you have chosen. Every mailbox can have a different level and you can select whether the messages that the spam filter considers as spam should be erased or re-sent to a separate mailbox where you can examine them at a later time, so as to avoid deleting a legitimate email. Switching to some other level or disabling the protection is also amazingly easy.
